A project conceived by a group of chefs and qualified experts in the sector who over the years have wanted to give an increasingly green imprint to the higher education school.

Haute cuisine is green and sustainable

Villa Blumenstihl, the splendid headquarters of Chef Academy, is an unparalleled example of respect and appreciation of nature.

Its natural garden is managed thanks to a domestic compost and produces over 300 aromatic plants.

Young cooking talents will be able to give space to their creativity, increasingly aware that tomorrow’s high-level cuisine will be green.

A lesson in sustainability

The Academy’s training program aims to give young chefs a new awareness of the magical encounter that can exist between taste and respect for the environment in every new culinary creation.

We study to know the origin of each dish, its chemical characteristics and the nutritional aspects of each ingredient.

The starred dishes of tomorrow will be created by chefs able to know and appreciate the quality of the raw materials.

Aspects related to sustainability and the short supply chain will also be taken care of.

National and international masters will help students of the Italian Chef Academy to discover new food trends.

Reuse of waste, new techniques to fight food waste and correct waste management.

Imagining the new luxury restaurants based on low environmental impact, respect for nature and powered by sustainable energy is a not too distant reality.

There are already over 7,000 young chefs trained by the Academy.
